Description

Aji amarillo and mayo create a creamy filling that works like tuna-mayo onigiri but with brighter pepper flavor.

Ingredients

  • 3 cups cooked short-grain rice
  • 1 1/2 cups shredded cooked chicken
  • 2 tbsp mayonnaise
  • 1 tbsp aji amarillo paste
  • 1 tsp lime juice
  • 1 tbsp chopped cilantro
  • Salt and pepper
  • Nori strips

Preparation

  1. Mix chicken, mayo, aji paste, lime juice, and cilantro.
  2. Season filling with salt and pepper.
  3. Wet hands with salted water.
  4. Shape rice around filling into triangles.

Assembly

  1. Press triangles firmly so they hold.
  2. Wrap each with nori strip.

Serving Suggestions

  • Serve with cucumber sticks.
  • Pack with extra lime wedge.

Notes or Variations

  • Rotisserie chicken works well here.
  • Add finely diced celery for crunch.
