Aji amarillo and mayo create a creamy filling that works like tuna-mayo onigiri but with brighter pepper flavor.
Ingredients
- 3 cups cooked short-grain rice
- 1 1/2 cups shredded cooked chicken
- 2 tbsp mayonnaise
- 1 tbsp aji amarillo paste
- 1 tsp lime juice
- 1 tbsp chopped cilantro
- Salt and pepper
- Nori strips
Preparation
- Mix chicken, mayo, aji paste, lime juice, and cilantro.
- Season filling with salt and pepper.
- Wet hands with salted water.
- Shape rice around filling into triangles.
Assembly
- Press triangles firmly so they hold.
- Wrap each with nori strip.
Serving Suggestions
- Serve with cucumber sticks.
- Pack with extra lime wedge.

- Rotisserie chicken works well here.
- Add finely diced celery for crunch.
