Sesame Aji Tuna Rice Bowl

Ingredients
- 1 lb sushi-grade or very fresh tuna, cubed
- 1 tsp neutral oil
- 1 tbsp soy sauce
- 1 tbsp aji amarillo paste
- 1 tsp sesame oil
- 1 tsp lime juice
- 4 cups cooked rice
- 1 cucumber, diced
- 1 avocado, diced
Preparation
- Sear tuna briefly in hot oiled pan, 30 to 45 seconds per side.
- Mix soy sauce, aji paste, sesame oil, and lime juice.
- Toss cucumber and avocado with a pinch of salt.
- Warm rice.
Assembly
- Place rice in bowls.
- Add tuna and drizzle aji-sesame dressing.
- Top with cucumber and avocado.
Serving Suggestions
- Add toasted sesame seeds.
- Serve with nori strips.

- Use cooked salmon for a fully cooked option.
