Ingredients
- 3 cups cooked short-grain rice
- 6 oz chorizo
- 1 tsp toasted sesame oil
- 1 tbsp sesame seeds
- 1 scallion, minced
- 1 tsp soy sauce
- Nori strips
- Salted water for shaping
Preparation
- Cook chorizo until crisp; reserve 1 tsp rendered fat.
- Mix chopped chorizo with sesame oil, sesame seeds, scallion, and soy sauce.
- Shape rice around a spoon of filling.
- Press firmly into triangle shapes.
Assembly
- Brush triangles lightly with reserved chorizo fat.
- Wrap with nori strips.
