Ingredients
- 30 dumpling wrappers
- 8 oz chorizo
- 1 cup mashed potato (cooled)
- 1 scallion, minced
- 1 tsp soy sauce
- 2 tbsp neutral oil
- 1/2 cup water for steaming
Preparation
- Cook chorizo until browned and drain excess fat.
- Mix with mashed potato, scallion, and soy sauce.
- Fill wrappers and seal.
- Pan-fry, then steam with water until wrappers are tender.
Assembly
- Re-crisp bottoms after steaming.
- Serve immediately.
