Miso Chicken Arepa

This arepa keeps flavors clean and balanced: salty-sweet miso chicken with fresh cucumber crunch.
Ingredients
- 2 cups masarepa
- 2 1/2 cups warm water
- 1 tsp salt
- 1 lb chicken thigh, sliced
- 1 tbsp white miso
- 1 tbsp soy sauce
- 1 tsp honey
- 1 tsp grated garlic
- 1 cup cucumber matchsticks
- 1 tsp sesame seeds
Preparation
- Prepare arepa dough with masarepa, water, and salt. Form 6 discs.
- Pan-cook arepas 5 to 6 minutes per side until golden.
- Cook chicken in a skillet; add miso, soy sauce, honey, and garlic until glazed.
- Toss cucumber with sesame seeds and a pinch of salt.
Assembly
- Open arepas into pockets.
- Fill with miso chicken and cucumber salad.
Serving Suggestions
- Serve with lime wedges.
- Add chili flakes for more kick.

- Swap chicken for turkey thigh.
