Ingredients

  • Tamal masa components (same as base tamal recipe)
  • 1 lb mushrooms, finely chopped
  • 1 tbsp neutral oil
  • 1 tbsp white miso
  • 1 tbsp soy sauce
  • 1/2 cup roasted corn
  • 1 tsp sesame oil
  • 1 scallion, minced

Preparation

  1. Prepare tamal masa and soaked husks.
  2. Cook mushrooms in oil until browned.
  3. Add miso, soy sauce, corn, sesame oil, and scallion.
  4. Fill tamales and steam 75 to 90 minutes.

Assembly

  1. Let tamales rest briefly after steaming.
  2. Serve with salsa macha or mild salsa.
