Aji Chicken Dumplings
Chicken and cabbage dumplings seasoned with aji amarillo, ginger, and soy.

Description
Aji amarillo gives these dumplings subtle fruity heat while ginger keeps the filling bright.
Ingredients
- 30 dumpling wrappers
- 1 lb ground chicken
- 1 cup finely chopped cabbage
- 1 tbsp aji amarillo paste
- 1 tsp grated ginger
- 1 tbsp soy sauce
- 1 scallion, minced
- 2 tbsp neutral oil
- 1/2 cup water for steaming
Preparation
- Mix chicken, cabbage, aji paste, ginger, soy sauce, and scallion.
- Fill wrappers and seal tightly.
- Pan-fry bottoms in oil until golden.
- Add water, cover, and steam 5 minutes.
Assembly
- Let water evaporate so bottoms crisp again.
- Serve with soy-lime dipping sauce.
Serving Suggestions
- Add cucumber salad on the side.
- Sprinkle toasted sesame seeds on top.
Notes or Variations
- Turkey can replace chicken.
- Add finely minced cilantro to filling.
