Description

Aji amarillo gives these dumplings subtle fruity heat while ginger keeps the filling bright.

Ingredients

  • 30 dumpling wrappers
  • 1 lb ground chicken
  • 1 cup finely chopped cabbage
  • 1 tbsp aji amarillo paste
  • 1 tsp grated ginger
  • 1 tbsp soy sauce
  • 1 scallion, minced
  • 2 tbsp neutral oil
  • 1/2 cup water for steaming

Preparation

  1. Mix chicken, cabbage, aji paste, ginger, soy sauce, and scallion.
  2. Fill wrappers and seal tightly.
  3. Pan-fry bottoms in oil until golden.
  4. Add water, cover, and steam 5 minutes.

Assembly

  1. Let water evaporate so bottoms crisp again.
  2. Serve with soy-lime dipping sauce.

Serving Suggestions

  • Add cucumber salad on the side.
  • Sprinkle toasted sesame seeds on top.
