Ingredients
- 1 1/2 lb chicken thighs, sliced
- 1 tbsp neutral oil
- 1 tsp grated ginger
- 1 garlic clove, minced
- 8 corn tortillas
- 2 tbsp sour cream
- 1 tbsp aji amarillo paste
- 1 cup shredded cabbage
- 1 scallion, sliced
- 1 tbsp lime juice
Preparation
- Cook chicken with oil, ginger, and garlic until browned and cooked through.
- Mix sour cream with aji paste and lime juice.
- Warm tortillas.
- Salt cabbage lightly.
Assembly
- Fill tortillas with chicken.
- Top with cabbage, scallion, and aji crema.
Serving Suggestions
- Serve with black beans.
- Add pickled red onion.

- Turkey thigh is a good substitute.
