This bowl keeps pollo asado’s citrus backbone while adding soy for a deeper savory finish.
Ingredients
- 1 1/2 lb chicken thighs
- 1 tbsp orange juice
- 1 tbsp lime juice
- 1 tbsp soy sauce
- 1 tsp smoked paprika
- 1 garlic clove, minced
- 4 cups cooked rice
- 1 cup roasted corn
- 1 avocado, sliced
Preparation
- Marinate chicken with citrus juices, soy sauce, paprika, and garlic for 15 minutes.
- Grill or pan-sear chicken until cooked through.
- Slice chicken.
- Warm rice and corn.
Assembly
- Add rice to bowls.
- Top with pollo asado, corn, and avocado.
Serving Suggestions
- Add pico de gallo.
- Serve with lime wedges.

- Chicken breast works but thighs stay juicier.
