Day-old arepa adds chewy-crisp bites to fried rice and works well for leftovers.
Ingredients
- 3 cups cold cooked rice
- 1 leftover arepa, diced small
- 2 eggs, beaten
- 1 tbsp neutral oil
- 1 tbsp butter
- 1 tbsp soy sauce
- 2 scallions, sliced
- Salt and pepper
Preparation
- Crisp diced arepa in a hot pan with oil; remove.
- Scramble eggs and set aside.
- Stir-fry rice with butter and soy sauce.
- Fold in eggs, arepa pieces, and scallion.
Assembly
- Serve hot in bowls.
- Top with extra scallion.
