This vegetarian onigiri uses a thick salsa-bean filling so the rice stays intact and portable.
Ingredients
- 3 cups cooked short-grain rice
- 3/4 cup black beans, drained
- 1/2 cup roasted corn
- 2 tbsp thick salsa
- 1 tsp cumin
- 1 tbsp chopped cilantro
- Salt to taste
- Nori strips
Preparation
- Mash black beans lightly with salsa and cumin.
- Fold in roasted corn and cilantro.
- Keep filling thick to avoid leaking.
- Shape rice around 1 tbsp filling.
Assembly
- Form rice triangles with damp salted hands.
- Wrap with nori for grip.
Serving Suggestions
- Serve with avocado slices.
- Add pickled jalapenos for heat.
