Plantain Pork Rice Bowl

Sweet plantain and savory soy pork give this bowl a strong sweet-salty balance with bright acidity from onion.
Ingredients
- 1 lb ground pork
- 1 tbsp neutral oil
- 2 garlic cloves, minced
- 1 tbsp soy sauce
- 1 ripe plantain, diced
- 1 tbsp butter
- 1/2 red onion, thinly sliced
- 1 tbsp lime juice
- 4 cups cooked rice
Preparation
- Quick-pickle onion with lime juice and a pinch of salt.
- Cook pork with oil and garlic until browned; add soy sauce.
- Saute plantain in butter until caramelized.
- Warm rice.
Assembly
- Fill bowls with rice, pork, and plantain.
- Top with pickled onion.
Serving Suggestions
- Add cilantro and hot sauce.
- Serve with cucumber slices.
Notes or Variations
- Ground chicken works well too.
- Add black beans for extra fiber.
