Yakitori sauce and elote toppings combine into a rich fried rice that still feels bright from lime.
Ingredients
- 1 lb chicken thigh, cubed
- 2 tbsp soy sauce
- 1 tbsp mirin or honey water
- 3 cups cold cooked rice
- 1 cup corn kernels
- 1 tbsp neutral oil
- 2 tbsp mayo
- 1 tbsp lime juice
- 1/3 cup cotija
Preparation
- Cook chicken with soy sauce and mirin/honey until glazed and cooked through.
- Char corn in a hot pan.
- Stir-fry rice in oil until hot.
- Fold in chicken and corn.
- Mix mayo with lime juice.
Assembly
- Plate fried rice.
- Drizzle lime mayo and sprinkle cotija.
Serving Suggestions
- Add chili powder or tajin.
- Serve with scallion and cilantro.
