Miso Barbacoa Taco
Slow-cooked beef barbacoa with white miso and toasted sesame in warm tortillas.

Miso deepens barbacoa’s savoriness without overpowering classic chile and lime notes.
Ingredients
- 2 lb beef chuck roast
- 2 tbsp neutral oil
- 2 dried guajillo chiles, softened
- 2 garlic cloves
- 1 tbsp white miso
- 1 tbsp soy sauce
- 1 tbsp apple cider vinegar
- 1 cup beef stock
- 10 corn tortillas
- Diced onion and cilantro
Preparation
- Blend guajillo, garlic, miso, soy sauce, vinegar, and stock.
- Sear beef in oil, then add sauce.
- Braise covered on low heat for 2 1/2 to 3 hours until tender.
- Shred beef and reduce sauce to coat.
- Warm tortillas.
Assembly
- Fill tortillas with miso barbacoa.
- Top with onion and cilantro.
Serving Suggestions
- Serve with lime wedges.
- Add radish slices for crunch.
Notes or Variations
- Pressure cooker: 55 minutes high pressure.
- Add sesame seeds before serving.
