Description

Miso deepens barbacoa’s savoriness without overpowering classic chile and lime notes.

Ingredients

  • 2 lb beef chuck roast
  • 2 tbsp neutral oil
  • 2 dried guajillo chiles, softened
  • 2 garlic cloves

  • 1 tbsp soy sauce
  • 1 tbsp apple cider vinegar
  • 1 cup beef stock
  • 10 corn tortillas

Preparation

  1. Blend guajillo, garlic, miso, soy sauce, vinegar, and stock.
  2. Sear beef in oil, then add sauce.
  3. Braise covered on low heat for 2 1/2 to 3 hours until tender.
  4. Shred beef and reduce sauce to coat.
  5. Warm tortillas.

  1. Fill tortillas with miso barbacoa.
  2. Top with onion and cilantro.
